These Chickpea Pancakes with Garlic Mushrooms, Spinach & Soft Boiled Eggs are a delicious, nutrient-dense way to fuel your morning. Ingredients (Serves 2) 

  • 70g chickpea (gram) flourĀ 
  • 2 tbsp olive oilĀ 
  • 120ml waterĀ 
  • 300g chestnut mushrooms, quarteredĀ 
  • 200g baby spinachĀ 
  • 100g baby tomatoes, halvedĀ 
  • 15g parsley, roughly choppedĀ 
  • 2.5g thymeĀ 
  • 2 garlic cloves, finely dicedĀ 
  • 2 medium eggsĀ

Step-by-Step Instructions 

Step 1: Whisk chickpea flour, 1/3 of the oil, thyme, a pinch of salt, and water into a smooth batter. Let it rest for 10–60 minutes. 

Step 2: Heat 1/3 of the remaining oil in a pan. Fry the mushrooms with salt and pepper over high heat until golden (10 mins). Add garlic, cook for 2 more minutes, then stir in spinach and cook until wilted and dry (5 mins). Add tomatoes and remove from the heat.Ā 

Step 3: To soft-boil the eggs, bring water to a boil, gently add eggs, and simmer for 6½ minutes. Transfer to cold water and peel. 

Step 4: To make the pancakes, heat the rest of the oil in a pan. Use a ladle to pour batter into the pan, cooking each side for 2–3 minutes until golden. Repeat until all batter is used. 

Step 5: Serve pancakes topped with garlic mushrooms, spinach, soft-boiled eggs, and chopped parsley.Ā
